Easy Tofu Scramble

Ingredients
1/2 onion, chopped1 roasted Hatch chile, diced1 block firm tofu, drained and pressed2 Tbsp. extra virgin olive oil2 cloves garlic, minced1 tsp. garlic powder1 tsp. onion powderdash sea salt1/2 tsp. black pepper1 Tbsp. soy sauce1/2 tsp. cumin powder1/2 tsp. curry powder
Directions
After draining tofu, press out all the liquid with paper towels and place in a bowl. Mash with fork or potato masher until crumbly.
Saute the onion and chile in olive oil over medium high heat. Add the tofu, spices and soy sauce and cook 8-12 minutes, stirring frequently.
Serve immediately.
