Slow Cooker Coq Au Vin Stew

Ingredients
3 lbs. chicken thighs (bone-in, skin removed)1package of beefy-onion soup mix1/2 cup of red wine2 cups of sliced mushrooms1 cup of chopped onions1 cup of carrots
Directions
1. Spray skillet with non-stick cooking spray
2. lightly brown chicken thighs on each side (about 4 min per side)
3. Place chicken thighs in slow cooker
4. Layer onions, carrots, mushrooms on top of chicken.
5. Sprinkle beefy-onion soup mix over everything.
6. Pour red wine over everything.
7. Cover and cook on low for 5 - 6 hours.
8. Before serving, remove bones and shred chicken with a fork.
