Maple Orange Sweet Potato Casserole

2 Large Sweet potatoes cooked (baked or boiled)1/4 c orange juice1/4 c soy milk 3 T Maple Syrup1 T Pumpkin Pie Spice
Remove cooked potato flesh from skins into a mixing bowl. Add the rest of the ingredients and mash or mix until well blended.
Consistency should be smooth but NOT runny. Proportions of liquid to potato may vary depending on the size of the sweet potatoes.
Spoon mixture into a casserole dish coated with cooking spray and bake uncovered for 20 - 30 minutes at 400 F or until heated through. Serve warm.
If you must add the pecan topping please NOTE: it adds an extra 142 calories per serving! Ouch!
If you like the taste of sweet potatoes without spice, you can omit the pumpkin spice for a more natural flavor.
