Black Bean and Chorizo Chili

2 chipotle chilies in adobo sauce, finely chopped1 tsp olive oil1 large onion, chopped 1 large green bell pepper, chopped 1 large red bell pepper, chopped 5 garlic cloves, minced6 oz Spanish chorizo sausage, diced1 1/2 Tbsp chili powder1 Tbsp ground cumin1 1/2 tsp dried oregano1 Tbsp fresh lime juice 1/8 tsp ground cinnamon3 cups canned low sodium black beans, drained & rinsed3 (14 oz) cans low sodium whole peeled tomatoes, undrained & chopped1 (8 1/2 oz) can no salt added whole-kernel corn, drained1 1/2 oz semi sweet chocolate, choppedSalt & pepper, to taste
1. Heat a large pan over medium-high heat and add olive oil. Once warmed, add chilies, onion, bell peppers, garlic and chorizo; saute 5 minutes or until tender. Add chili powder, cumin, oregano, lime juice, cinnamon, black beans, tomatoes and corn, stirring to combine.
2. Bring mixture to a boil. Cover, reduce heat and simmer for 30 minutes, stirring occasionally. Remove from heat and stir in chocolate and salt & pepper to taste. Serve immediately.
