Southwestern Brown Rice

Ingredients
4 cups cooked instant brown rice (Uncle Ben's is best)3/4 cup canned black beans, rinsed1/2 cup fresh or canned corn1/4 cup finely chopped oniondiced jalapeno to taste1 tbs minced fresh cilantro1 tbs olive oilsalt & pepper to tastehot sauce on the side, optional
Directions
Cook instant brown rice for 12 minutes as directed on package to make four cups.

Cool slightly, then drizzle with olive oil and season with salt and pepper. Mix in remaining ingredients. Serve as a side dish or a vegetarian main dish.
