2 Tbsp. Oil (for browning onions and meat)1 lb. Ground Beef, 80% lean2 cups Onion, chopped4 cups Potato, sliced thin1 lb bag Peas & Carrots, frozen (thawed out)1 can Tomato Soup (10-3/4 oz)1 can Cream of Mushroom Soup (10-3/4 oz)Salt & Pepper1 cup shredded cheddar cheese (2%) *optional
In a large skillet, cook onion in oil till clear. Add ground beef and cook till beef is no longer pink. Pour meat mixture into a large bowl and add peas, carrots and potatoes. Salt and pepper to taste. Gently fold all of this together. Pour both soups in to a bowl and blend. Pour the soup mix over all and gently fold soup into mixture. Pour this into a 9 x13 greased cake pan.
Bake at 350 uncovered for 45 minutes then sprinkle 1 cup of cheddar cheese on top and bake another 30 minutes.
Serving Size: Makes 8 servings.
