Chicken Panang

Ingredients
Chicken Breast, cubed, 2 poundsOil, 2 tbspMaesri Red Curry Paste, 1 canChaokoh Coconut Milk, 1 canGranulated Sugar, 3 tbspJif Creamy Peanut Butter, 3 tbsp Ginger, ground, 1/4 tsp Basil, 8 tbsp Fish Sauce, 2 tbsp Lime Juice, 2 tbsp
Directions
Pan fry chicken in oil. Remove meat when almost done. Add curry paste, and 1/2 can of coconut milk to pan and bring to boil. Add meat back to pan and continue cooking. Add fish sauce, sugar, and peanut butter. stir well. Add rest of coconut milk and ginger and lime juice. Continue cooking till slightly thickened. Add basil right before removing from heat
