Zucchini Soup/Gluten free

Ingredients
1 Tablespoon olive oil 1/4 medium sweet onion, chopped1 clove garlic, minced2 medium zucchini, cut into small chunks1 cup gluten-free vegetable stock1 1/2 tablespoons heavy cream(almond milk)
Directions
In large saucepan, heat olive oil over medium heat. Add onion and garlic, and saute until onion is translucent. Add zucchini and stock. Simmer for 6 to 9 min., or until zucchini is soft. Place ingredients in blender and add cream. Pure until mixture reaches desired consistency.

Serving Size: 2 bowls of soup- about 1 1/2 cups each.
