Rich Tea Bread (Anytime Fruitcake)

Ingredients
1/2 cup prunes1/2 cup raisins1/4 cup diced dates1/3 cup Craisins1/3 cup diced figs1 1/2 cups strong-brewed Earl Grey tea, hot3 tbsp maple syrupzest and juice of 1 orange1/3 cup canola oil1 1/2 cups spelt flour1 tsp baking powder1 tsp baking soda1/4 tsp sea salt1 tsp cinnamon1/4 tsp nutmeg1/4 tsp cardamom1/4 tsp ginger1/3 cup toasted pumpkin seeds1/3 cup toasted sunflower seeds2/3 cup chopped walnuts1/4 cup slivered almonds
Directions
Combine the prunes, raisins, dates, Craisins, figs, tea, syrup, orange juice and orange zest in a large bowl. Cover and let stand 1 hour.
Preheat the oven to 350F and grease a 9x5" loaf pan.
Add oil to the bowl of fruit, then mix in the dry ingredients until blended.
Fold in the seeds and nuts.
Spread in the pan and bake for 50-55 minutes, until tests done.
Cool in the pan for 30 minutes, then turn out onto a rack and cool completely.

Serving Size: Makes one 9x5" loaf, 12 slices
