Warm Squid in Half A Pineapple

100 grams of sliced squid2 teaspoon of vegetable oil1 teaspoon garlic & ginger1/2 teaspoon sugar (white or brown)1 teaspoon of salt or light fish sauce1 tablespoon of tomato paste1 tablespoon of sweet & sour chilli sauce1/2 cup chopped green pepper (capsicum)1 pineapple1/2 cup chopped tomato1/2 cup chopped onion1 tablespoon waterFew pieces of fresh coriander
Cut two small sides off the pineapple. Then cut out a large square from the center leaving the sides. Chop the pineapple square into cubes for the mixture.
Add 2 teaspoon of vegetable oil to wok or pan and stir in garlic and ginger. Add squid, salt & sugar, and fry for 1 minute. Put in remaining vegetables and tomato paste, fry (on high) for a further 3-4 minutes, adding water.
Once cooked, serve mixture inside the remaining pineapple on a plate.
