Pumpkin Pie Pancakes

Ingredients
1 cup whole wheat flour2 tsp baking powder1/2 tsp baking soda1 tsp ground ginger1 tsp ground nutmeg1 tsp cinnamon1/2 tsp ground cloves1/4 cup brown sugar1/2 cup egg substitute1/2 can pumpkin1/4 cup sugar-free apple sauce1 cup lactose-free milk
Directions
Combine flour, baking powder and soda, and spices in a small bowl.

In a separate bowl, combine brown sugar, egg substitute, pumpkin, and apple butter. Add milk.

Add the liquid and solid together all at once and combine well with a wooden spoon (do not use an electric beater)

Heat a skillet over medium heat. Cover with non-stick cooking spray. Place mounds of batter to desired size onto skillet. Cook 2-3 minutes on each side (depending on your stove top) or until lightly browned and cooked through.
