Autumn Apple Spice Granola Bites

• 1 ½ cup whole wheat flour• 3 teaspoons pumpkin pie spice • ½ teaspoon baking soda• ¼ teaspoon salt• 1 tsp. vanilla extract• 1 cup mini marshmallows• 1 fresh apple, cut into small pieces• ½ cup butter or margarine• 1 ¾ cups quick-cooking rolled oats, uncookedYields: ~44 bites
Set mixture of cut bite sized apple chunks, marshmallows, oats, sugar, salt, and baking soda, and pumpkin spice in a bowl and combine.
Microwave the butter until it is a liquid. Then, mix the vanilla and butter together and pour into the granola mixture. Add milk until it looks like cookie dough batter.
In a shallow pan, spread the mixture and pat it down firmly. Bake at 325°F for 15 minutes, or until crispy and a toothpick comes out clean.
Serving Size: Yields 44 bites (2 inch pieces)
