Spicy Sweet Potatos & Butternut Squash

4 cups cubed Sweet Potatoes3 cups cubed Butternut Squash1 cup chopped Onion4 tbsp EVOO2 Garlic cloves, minced1 tsp Red Pepper Flakes1/4 tsp Sea Salt1/4 tsp cracked Peppercorn1/2 tsp Cumin, ground1/2 tsp Coriander, ground1/2 tsp Ginger, ground or 1 tsp crystallized ginger1/2 Lemon, squeezed for juice and zest the peel
Roast garlic, onions and all spices in the olive oil at medium heat until onions begin to carmelize. Add the cubed potatoes and squash, stir to coat evenly. Add the lemon juice and the zest from the lemon, stir to coat evenly. Cook covered on medium heat, stirring occassionally until potatoes and squash are soft and starting to carmelize on the outsides.
