Oven Roasted Yellow Squash

Ingredients
Yellow Squash 1 - 2 medium No-Stick sprayOlive Oil Drizzle - 1 TbspKosher salt and pepper To tasteSlap Your Mama seasoning (Cajun seasoning comparable to Old Bay) To tasteParchment paper (optional)our
Directions
Preheat oven to 375 degrees.

Line large cookie sheet with parchment paper and spray with No-Stick spray.

Slice squash in 1/4" slices.
Put in a bowl and drizzle with olive oil, sprinkle with kosher salt and pepper. Lightly sprinkle with Cajun seasoning. This is very hot so be careful you don't put too much unless you like heat. Toss to coat.

Place squash slices in single layer on prepared cookie sheet.

Place in preheated oven and let roast until edges are slightly brown and tender (tender means you are able to cut with a fork). Cook time can vary. If you prefer more crisp then keep them in longer. Watch closely towards end of baking time because they can quickly become burned.
