1 1/2 lb boneless, skinless chicken breasts1 large onion, sliced thin1 (15oz) can light coconut milk4 garlic cloves, minced1 tsp ginger, ground 1 tsp paprika1/2 tsp cinnamon1 tsp coriander1/2 tsp kosher salt1 tsp pepperJuice of 2 limesZest of 1 lime1/4 cup fresh cilantro, chopped
1. In a small bowl, combine salt, pepper, cinnamon, coriander, ginger, garlic and lime zest. Rub mixture over chicken evenly.
2. Place chicken and onions in a crock pot. Pour in coconut milk and lime juice.
3. Cover and cook on LOW 8 hours.
