Roasted Potato Salad

Ingredients
2 pounds red potatoes, diced2 Tbsp extra virgin olive oilsalt and pepper to tasteMrs. Dash to taste - about 1/2 tspGarlic powder to taste - about 1/2 tsp1/2 cup chopped onion1/4 cup sun-dried tomatoes, chopped2 Tbsp honey mustard1/2 cup Kraft Miracle Whip Light (or mayo)
Directions
Preheat oven to 350 degrees.

In a large mixing bowl, combine diced potatoes, EVOO, salt, pepper, Mrs. Dash and garlic powder. Place on a foil-lined baking sheet prepared with baking spray. Roast in oven until potatoes are tender, about 30 minutes.

Return roasted potatoes to mixing bowl and add remaining ingredients. Refrigerate.
