Half Moon Cucumber

You will need:1 English Cucumber1 tsp Sea Salt1 tsp Sesame Oil1 TB Sesame Seed, (Black &/or White)
1. Remove skin. Slice cucumber in half long ways, remove seeds and cut 1/4 inch slices starting at one end so that you end up with a bunch of half moon shapes or the letter 'C'.
2. Place slices in colander and toss with salt and set aside for 60 minutes.
3. Rinse the salt from the cucumber slices and press the slices firmly to remove excess moisture. ( I like to sandwich my slices in between some paper towels and bear down on them with my palms.)
4. Heat sesame oil in a non stick skillet or wok to med high. When the oil is ready stir fry the slices until they start to brown.
5. Remove from heat. Toss with sesame seeds.
Serve Hot.
