Chicken Enchilladas with queso (cheese dip)

Ingredients
2 to 2 1/2 chicken breasts, poached & shredded1/2 cup sour cream1/2 cup onion, chopped8 flour tortillascooking spray16 oz. Gordo's Cheese Dip (queso)
Directions
Preheat oven to 375 degrees and spray a glass 9 x 13 pan with cooking spray. In a medium bowl, mix poached, shredded chicken with chopped onion and sour cream. Spoon filling down the middle of flour tortillas, roll, and place seam down in the glass pan. Spray the tops of the enchiladas and place in the oven for 15-18 minutes, until they are browned. Microwave the cheese dip with the lid on for one minute, stir, then remove the lid and repeat the process, microwaving for 30 seconds at a time until cheese dip is smooth and ready to pour over the enchiladas. Pour the cheese over the enchiladas and serve immediately.
