Mac & Cheese Muffins

Ingredients
3 cups Dreamfield's macaroni, cooked al dente1 Tbsp I can't believe it's not butter light1 Tbsp flour1 cup skim milk1 garlic clove, minced1/2 cup Gruyere cheese, shredded1/2 cup fat free cheddar cheese, shredded3 egg whites1 (10 oz) pkg frozen spinach, defrosted & drained well Salt & pepper, to taste
Directions
1. Preheat the oven to 400 degrees. Lightly spray a 12 cup muffin tin with cooking spray and set aside.

2. In a small sauce pan, melt the butter over medium heat. Add the flour, mixing until thick. Stir in the milk and garlic and raise the temperature to bring the mixture to a low boil. Add the cheese and whisk mixture together until thoroughly combined into a cheese sauce. Remove from heat. Add in the egg whites to the mixture and mix until well combined.

3. In a large bowl, combine the pasta, spinach, cheese sauce and salt & pepper and mix well. Spoon the mixture evenly into the cups of the prepared muffin tin.

4. Bake 10 - 15 minutes, until the tops are slightly browned. Allow to cool 5 minutes before removing from pan.
