Strawberry Mousse

Ingredients
1 egg white or 4 tsp. powdered egg whites1/2 cup granulated sugar2 cups chopped fresh strawberriesfresh fruit to garnish
Directions
Place egg white in a large bowl or mix powdered egg whites with 1/4 cup warm water in bowl. Whisk for 2 minutes until light and foamy. With hand mixer, gradually beat in sugar and strawberries on medium speed. Increase speed to high and beat 15 minutes or until mixture fills the bowl. Use a very large bowl as this expands quite a bit. These are large servings.
Transfer to a decorative bowl and freeze for 4 hours. To serve, remove from freezer and garnish with fresh fruit. Makes 8 1 cup servings.
