Diet Friendly Macaroni Salad

2 cups macaroni noodles 1 cup low-fat mayonnaise3 tablespoons chopped sweet pickle - nu sugar added3/4 tsp ground mustard1/4 tsp sea salt1/8 tsp pepper2 packets Stevia1/2 cup chopped celery1/3 cup chopped carrots1/4 cup chopped onion1 Hard boiled egg, chopped
Cook macaroni according to package directions; drain and rinse with cold water. Cool completely.
For dressing, in a small bowl, combine the mayonnaise, pickle relish, sugar substitute, mustard, salt and pepper. In a large bowl, combine the macaroni, celery, carrot and onion. Add dressing and chopped egg and toss gently to coat.
Refrigerate until serving.
