Tomato, Potato, and rice Soup

Ingredients
3 T olive oil2 med potato diced2 med carrots diced2 med celery diced1/2 onion diced1 can diced tomatoes1 can tomato paste10 c chicken stock1/2 c rice5 t dried parsley2 bay leaves
Directions
Mix all ingredients in large pot, simmer until potatoes and carrots are tinder. About one hour. We can sprinkle romano cheese (not included in calories)
