Spinach Crab Chicken

Ingredients
1/2 cup finely chopped onion1/4 cup chopped fresh mushrooms1/4 cup finely shopped celery3 Tablespoons butter1 1/2 Tablespoon cornstarch1/2 teaspoons salt-divided1 cup chicken broth1/2 cup fat free milk4 boneless skinless chicken breast halves-6 ozs each1/8 teaspoon white pepper1 6 oz. can crabmeat, drained, flaked, cartilage removed12 fresh spinach leaves, chopped1 Tablespoon minced fresh parsley1 cup shredded swiss cheese
Directions
Sauce: Saute onion, mushrooms and celery in butter til tender. Stir in cornstarch, 1/4 teaspoon salt. Gradually
add broth and milk. Bring to a boil, cook and stir for 1-2 minutes until thickened. Remove from heat.

Flatten chicken to 1/4 inch thickness. Sprinkle with pepper and 1/4 teaspoon salt.
In bowl, combine crab, spinach parsley, stir in 1/2 cup of sauce. Spoon 1/4 cup down center of chicken, then roll up and secure with toothpick. Place seam side down in a 9X13 pan coated with PAM. Top with remaining sauce. Cover and bake at 375* for 35-45 minutes-til juices run clear. Sprinkle with cheese. Broil 4-6 inches from heat for 5 minutes or until lightly browned. 4 servings.
