4 Large Artichokes1 Pound 97% Fat Free Ground Beef1 Egg1/4 Cup Italian Bread CrumbsDried OreganoDried BasilSaltPepper
Cut the stems of the artichokes off at the base so they will stand flat, cut the tip of the artichoke off. Use scissors to snip the tip of each leaf. Mix your ground meat, spices to taste, breadcrumbs, and egg. Split the meat into four and stuff each artichoke leaf with a bit of the meat. Place in a large pot in about 2 inches of water and cook until you can easily pull out an inner leaf and it's tender to bite. Watch to make sure your water doesn't boil out. Serve with some spaghetti squash or veggies. Makes 4 servings.
