Banana, fresh, 1 cup, mashed Canola Oil, 1/3 cupEgg, 1 large Flour, white, 1.5 cupWheat bran, crude, .5 cupRaw Fancy Mixed Nuts, Chopped 1 CupRaisins, golden seedless, 1/4 CupBaking Powder, 2 tspBaking Soda, 1 tspCinnamon, ground, 1 tsp Nutmeg, ground, 1/4 tspVanilla extract, 1 tspSalt, dash
Preheat oven to 375 degrees.
In one large bowl, mix mashed bananas, vanilla, oil, & egg. In second bowl, sift or whisk flour, wheat bran, baking powder, baking soda, cinnamon, nutmeg & salt. Then, add nuts and raisins to dry ingredients, toss until coated well. Next, add dry ingredients to wet ingredients & fold until all ingredients ae incorporated. In lightly oiled (or lined with baking cups), add two to three tablespoons of batter to each cup. If mix is left over, distribute evenly to each cup. Bake 15 to 20 minutes, until toothpick inserted in to center of muffins come out clean.
