Flourless Sugar Cookies

2 cups cornstarch (I use Kingsford, available at Walmart for cheap)1 cup sugar1 egg1/2 teaspoon vanilla extract (I prefer Kirkland brand from Costco)3/4 cup (1 1/2 sticks) butter, room temp or shortening
*Using hand mixer, combine all ingredients until well blended. Place dough in refrigerator for at least an hour.
*Preheat oven to 375 degrees. Line baking sheet with foil.
*Roll the dough into 1-inch balls and place on the cookie sheet. Flatten with fork tines or the bottom of a glass.
*Bake cookies in center rack of oven for 7-10 minutes depending on the size of the cookie. Let cool on cookie sheet for a minute before removing to cooling rack. Enjoy!
*Dairy free option: substitute 3/4 cup shortening for the butter.
