Chicken Tortilla Soup

3 cups reduced sodium chicken broth1 1/2 lb boneless skinless chicken breast1/2 medium onion, diced1 cup frozen corn2 green onions, chopped1 (15oz) can no salt added diced tomatoes, undrained1 (15oz) can no salt added tomato sauce2 medium stalks celery, chopped1 large carrot, chopped1 (15oz) can low sodium black beans, rinsed & drained3 cloves garlic, minced1/4 tsp crushed red pepper flakes1/2 tsp cayenne pepper1 tsp cuminSalt, to taste
1. Combine all ingredients in the slow cooker and stir to mix well.
2. Cover and cook on LOW 8 hours. Remove chicken from cooker and shred. Return to cooker and stir well to combine before serving.
3. Top each individual servings with optional toppings: tortilla strips, sour cream, and/or shredded cheddar cheese.
