Healthy German Apple Pancakes

Batter - 1/2 cups all purpose flour1/2 t baking powder1 T sugar or sugar substitute (recipe assumes sugar substitute)1/8 t salt1/8 t nutmeg1/8 t allspice1 c egg substitute1 c skim or fat free milk (recipe assumes fat free)2 T butter, melted1 t vanilla extractApples - 1/2 c sugar, divided 1/2 t cinnamon1/2 t nutmeg1 cup (roughly one medium) thinly sliced apple
Combine dry ingredients in a bowl for the batter, then add egg substitute, milk, butter, and vanilla in a small bowl. Add wet to dry and let stand 30 minutes.
Preheat oven to 425.
Grease an ovenproof skillet with cooking spray.
Combine half the sugar with spices and sprinkle in pan. Top this with apples arranged evenly. Sprinkle the rest of the sugar atop the apples.
Cook on medium for roughly 8 minutes, making the sugar bubble up. Pour batter carefully atop apples.
Bake for 15 minutes, reduce temp to 375 and bake an additional 13 minutes or until set. Carefully loosen pancake. Serve immediately.
