Low Carb Almond Spice Cake

Ingredients
1/2 cup butter softened1/2 cup cream cheese 1 cup Splenda 5 eggs, at room temperature 2 cups almond flour 1 teaspoon baking powder 1 1/2 teaspoons grated lime zest 1 teaspoon ground nutmeg 1/2 teaspoon ground cinnamon 1/4 teaspoon ground allspicedash of salt 1 teaspoon vanilla extract
Directions
Cream butter, cream cheese and Splenda well. Add eggs, one at a time, beating well after each. Mix almond flour with baking powder and spices, add egg to mixture a little at a time while beating. Add vanilla extract and lime zest. Pour into greased 9" round cake pan and bake at 350°F(175°C) for 50-55 minutes.

Very flavorful. We eat it with whipped cream sweetened with Splenda and flavored with vanilla. Applesauce would also be a great topping (but not really low carb!).

***If you cannot find almond flour, it is very easy to make with some raw almonds and a coffee grinder. Just make sure not to grind long or you will make almond paste. It works well to grind for a bit and sift through a mesh handled kitchen strainer.
