Zoe's Pumpkin Chili

1 large yellow onion1 large sweet potato3 large carrots1 red bell pepper1 orange bell pepper1 yellow bell pepper1 pound ground turkey1 quart chicken broth2 cans crushed tomato2 cans pumpkin puree1 can corn1 can black beans1 can red kidney beans1 can white beans3 cloves garlic3 heaping Tbsp. red chile powderSalt & pepper to taste
1. Peel and chop your onion, sweet potato, carrots & garlic and throw 'em in the pot.
2. Seed and dice your bell peppers and throw those in too.
3. Dump all the cans in, mix, mix, mix.
4. Add the ground turkey and chicken broth (OR skip the meat, use vegetable broth and make it vegan)
5. Add garlic, red chile, salt & pepper adjusting to your taste.
6. Mix thoroughly and leave to cook on low for 5 hours.
Enjoy!
Serving Size: Makes 12 2-cup servings
