Ingredients
1 lb Japanese Sweet Potato, Purple Skin White Flesh30 gms Ginger Root8 tsp Granulated Sugar8 cups Filtered Water
Directions
Fill a pot with 8 cups of water. Peel and cut sweet potato in cubes. Wash ginger root with a vegetable brush under the facet. Smash ginger root and add in the pot. When water comes to a boil, continue boiling for about 15 - 20 minutes. Add sugar and let it come to a boil before turning off the heat.
