Chicken Coconut Salad (w/o avocado

Ingredients
1 Chicken Breast (i use pre-cooked)1 cup coconut1/4 cup purple onion1 cup canned yellow sweet corn2 tbsp. lemon juice2 tbsp. cilantro1.5 cup fresh spinach or lettuce
Directions
Chop chicken, onion, and cilantro into small pieces. Add corn and lemon juice. Place on top of a bed of fresh spinach or lettuce of your choice and top with toasted coconut.
