2 tsp I can't believe it's not butter light1/2 cup scallions, chopped6 egg whites1 large tomato, chopped1/2 cup low sodium black beans, drained & rinsed1/4 cup salsa4 Corn Tortillas2 Tbsp fat free cheddar cheese, shreddedSalt & pepper, to taste
1. In a small skillet over medium heat, melt butter. Add scallions and cook for about a minute, just until soft. Pour in egg whites, tomatoes, beans and salsa. Cook, stirring with a rubber spatula until eggs are done, about 4 - 5 minutes.
2. Place 2 tortillas on a plate and scoop 1/2 the egg mixture over the top. Repeat with the remaining egg mixture and tortillas.
3. Top each serving with 1 Tbsp cheese and sprinkle with salt & pepper, to taste.
