Spaghetti with chorizo and almonds

12 oz fideos (thin spaghetti in 2" pieces)1.5 c chicken broth1.5 c water1/2 c white wine1/2 tsp saffron, crumbled1/2 tsp salt1 onion, finely chopped6 cloves garlic, sliced thinly4 oz spanish chorizo, diced2 Tbsp butter2 Tbsp olive oil15-oz can chickpeas1/2 c parsley, chopped1/2 c sliced almonds, toasted
Heat broth, water, wine, saffron & 1/2 tsp salt in pot.
In separate pot, heat oil & saute garlic 30 seconds. Scoop out onto paper towels. Add chorizo, saute 3 minutes. Remove to paper towels.
Add butter, melt, then saute onion 5 minutes. Add pasta, saute 4 minutes or until golden. Add hot broth. Cook, covered, until liquid is absorbed (6-10 min). Stir in chickpeas, chorizo, garlic, almonds & parsley. Add extra salt & pepper to taste.
Serving Size: makes 8 1-c servings
