Non-stick cooking spray Peeled seeded winter squash cut into 1 inch cubes (Such As Butternut Or Acorn) Onion Apple juice/Apple cider Olive oil/Cooking oil Brown sugar Salt Ground nutmeg/Ground ginger Black pepper
Coat a 3-quart rectangular baking dish with | cooking spray.
Add the squash and onion; toss to combine.
In a small bowl combine apple juice, oil, brown sugar, salt, nutmeg, and pepper; pour over vegetables.
Roast vegetables in a 450° oven about 35 minutes or until vegetables are tender, stirring twice.
