Pulled Pork with Dr. Pepper Sauce

Ingredients
3 lb pork butt or pork sirloin roast1 tsp salt1 tsp pepper2 Tbsp vegetable oil2 medium onions, sliced3 can(s) 12 oz dr. pepper3 large garlic cloves, minced1 bottle chili sauce1 c sweet baby ray's honey chipotle bbq sauce1/2 tsp root beer extract (optional)3 dash(es) hot pepper saucehamburger buns, or your favorite rolls, king hawiian are great
Directions
1 Trim any excess fat and cut meat into chunks to fit your crock pot. Preheat your largest skillet with the vegetable oil. Sprinkle meat with salt and pepper. Sear pork on all sides until browned. Transfer meat to crock pot with onions, garlic, and 1 can of Dr. Pepper.
2 Cover and cook on low-heat 8 to 10 hours or high-heat 4 to 5 hours.

3 For Sauce:

In a medium sized sauce pan combine 2 cans Dr. Pepper, Sweet Baby Ray's, and chili sauce. Bring to a boil then lower heat to simmer until reduced to about 1 1/2 cups about 35 to 50 minutes. Add hot pepper sauce and root beer extract.
4 When pork is finished remove to a sheet pan with higher edges to prevent dripping and shred pork. Remove onions from crock pot to a serving dish.

To Serve:

Place shredded pork on buns and top with the reserved onions and sauce.
