Couscous, Watermelon & Feta Watercress Salad w Lam

60g Israeli couscous (fregola)1 Tbl olive oil240g lamb backstraps, trimmed2 Tbl dukkah1/8 watermelon, sliced75g feta, crumbled1 cup picked watercress
Cook the couscous according to packet instructions. Drain & refresh.
Meanwhile, heat a frypan to high heat, season lamb, oil spray and cook 2-3 minutes per side. Remove from pan, roll in dukkah to coat, then loosely cover and set aside to rest.
Slice lamb, then place on top of the couscous with the watermelon, feta and watercress. Drizzle with any cooking juices and the olive oil. Grind over some black pepper & serve.
