Stuffed hubbard squash

Ingredients
1 Hubbard Squash3 cups Kamut, cooked1 cup Wheat berries, uncooked1 Carrot, chopped1 Onion, chopped2 stalks Celery, chopped6 oz shredded Mozzarella1 tbsp Olive oil4 cloves Garlic, chopped
Directions
Halve squash and scoop out seeds

Cook Wheat berries (15 minutes)

Saute onions, carrot, celery and garlic in olive oil.

Mix Kamut, wheat berries, vegetables and mozzarella and fill the squash.

Cover with foil.

Bake 90 minutes at 375.
