1-1.5 lb bag Baby Dutch Yellow Potatoes1 shallot, halved and sliced4 whole garlic cloves2 T. extra virgin olive oil1 T. flat-leaf parsley, choppedSea salt & freshly cracked pepper
Preheat oven to 375° and line a rimmed baking sheet with parchment paper. Quarter the potatoes. Halve and slice the shallot. Spread the potatoes, shallot slices, and garlic onto the baking sheet. Toss with the olive oil and season with sea salt and freshly cracked pepper. Smooth the mixture into a single layer to promote even cooking. Sprinkle the top with the parsley. Bake 20-30 minutes, or until the potatoes and garlic cloves are fork tender.
