Chicken Tomato Florentine Soup (2-cup servings)

2 c. Rotisserie chicken, shredded3 c. Chicken broth1 c. Tomato puree1 - 14 oz. can Diced tomatoes2 c. Fresh spinach leaves1 medium onion, chopped2 Carrots, cut into bite size pieces2 stalks Celery, cut into bite size pieces2 clove Garlic, chopped1 Zucchini, sliced and quartered2 T. Parsley2 T. Basil2 T. Oregano
1. Remove chicken from the bone and shred; set aside to add to crockpot just before serving.
2. Chop all vegetables into bite size pieces, except for spinach (just add leaves) and garlic (mince).
3. Combine all ingredients (minus chicken) in crockpot; stir together and cook on high for 6 hours or low for 8 hours.
4. Just before serving, stir in chicken. Heat through for about 5 minutes, then serve.
Serving Size: Makes 8 - 2 cup servings
