Chocolate Peanut Butter Pretzel Squares

2 tbsp coconut oil4 ½ cups mini marshmallows, divided3 tbsp creamy peanut butter¼ tsp kosher salt2 tbsp chopped, roasted peanuts(unsalted)3 cups crisp brown rice cereal1 ½ cups salted sourdough hard pretzels, broken into pieces4 oz bittersweet chocolate, chopped roughly1 oz milk chocolate, chopped roughly
Melt the coconut oil in a large pot and add 4 cups of the marshmallows, peanut butter, salt and peanuts.
Cook, stirring, for 3 minutes.
Remove from the heat and stir in the remaining marshmallows, followed by the rest of the ingredients.
Scrape into a parchment lined 9” pan and press in evenly.
Let cool to room temperature before removing from the pan and cutting.
Serving Size: makes one 9" pan, 16 pieces
