***The measurements below are for 32 muffin bites or 16 normal-sized muffins. I tripled the recipe when I made it.1/5 cups wheat bran1 cup Almond Breeze unsweetened vanilla almond milk1/2 cup unsweetened applesauce1 egg2/3 cup light brown sugar1/2 teaspoon vanilla extract1/2 cup all-purpose white flour1 teaspoon baking soda1 teaspoon baking powder1/2 teaspoon salt1 cup cranberries
1. Preheat oven to 375 degrees F (190 degrees C). Spray muffins cups with non-stick spray.
2. Mix together wheat bran and almond milk. Let stand for 10 minutes.
3. In a large bowl, mix together applesauce, egg, brown sugar, and vanilla. Stir in bran mixture. Add flour, baking soda, baking powder, and salt. Stir until just blended. Fold in cranberries.
4. Scoop into muffin cups.
5. Bake for about 15 minutes. Baking time will vary by oven and size of muffin cups.
