Low Fat Potato Soup

3 14.5 oz fat free chicken broth2 Cups diced Celery1 Cup diced onion12 Cups diced potato7 Cups fat free milk1 teaspoon black pepper1 teaspoon salt
Combine chicken broth, celery, onion, potatoes and salt and pepper in a large pot. Boil for about 20 minutes. Meanwhile pour milk in a 6 qt slow cooker and set on low for 4 hours.
When vegetables are tender transfer all but 2 cups to the slow cooker. Blend the remaining 2 cups with an immersion blender until smooth, add to the slow cooker. Let soup continue to cook and blend flavors for the remaining time. Add additional salt and pepper to taste.
