Latkes (Rutabaga)

Ingredients
1. 1 shredded rutabaga (works out to be about 3 cups)2. 2 eggs (lightly beaten)3. 2 tbsp buckwheat flour 4. Salt, spices of choice (I felt like some hungarian paprika)5. Coconut oil/cooking oil of choice
Directions
1. Mix the ingredients
2. Get your skillet sizzling but not smoking with the coconut oil
3. Make little patties with a spoon and toss them into the pan (about 4 fit per round)
4. Crisp up in pan for about 5 minutes... flip and crisp for another 3 minutes

Serving Size: makes a dozen latkes
