Quinoa bean and veggie bowl

Ingredients
1 cup dry quinoa1 can diced tomatoes1 can black beans3 or 4 carrots1 cup chopped kaleSqueeze of fresh lemonA splash of sriracha sauce
Directions
Bring 2 cups water and 1 cup quinoa to boil
Chop up carrots and kale
Drain beans and tomatoes
Add carrots, kale, beans, and tomatoes to pot of quinoa
Add a squeeze or two of lemon
Simmer, covered for 15 minutes
Add a splash or two of sriracha
Salt and pepper to taste

Serving Size: Makes 4 rounded cup servings
