Raw Carob Fudge

2/3 c. Almond pulp (left from strained almond milk)1/2 C rolled oats (I roll my own from oat groats)1/3 C. raw carob powder1/2 C. organic raw tahini6 Medjool Dates (soaked in water for 2 hours)/2 c. date soaking water1/4 C. unsweetened, shredded coconut1/2 c. walnuts1/2 tsp. vanilla25 Pecan halves
Soak dates in water for 2 hours. Reserve 1/2 c. water.
Place all ingredients (except nuts) in food processor with S blade. Stir in nuts. Press in small 8" square pan. Score and place 1/2 pecan on top. refrigerate or freeze.
Serving Size: Makes 25 1-1/2 inch squares
