Stuffed Chicken with Leeks

1 GSN Steamed Chicken Breast eachSpinach and Pine Nut Pesto - 1/4 cupLeeks - 1 cupMushrooms - 1 cupBacon - 50gCream cheese - 2 tbsp
Cut and fry the bacon in a ceramic or non stick pan.
Cut the leeks and mushrooms and fry with the bacon. When soft add the cream cheese, keep stirring for about 1 minute.
Slice in half and warm the chicken breast either in the steamer, pan of boiling water or in the same pan as the leeks. Spread the pesto onto the slices of chicken and plate up.
Serving Size: makes 1 serving at 639 kcal per portion
