Sugar Free Fiber One Peanut Butter Cookies

Ingredients
1 cup peanut butter1 cup Fiber One Cereal (original)1 cup Splenda1 large egg
Directions
Mix peanut butter, splenda and egg together until thoroughly combined.

Incorporate cereal and mix until all is coated.

Bake at 350 degrees until brown on top. Cookies will be slightly crumbly.

    I made some cookies like these before: I used Smart Balance Chunky Peanut Butter, and used rolled Oats, Kashi Granola, and Bran Flakes...I also added dried fruits...they turned out dry but good. - 6/25/08

    I did cut down on the Splenda by about 1/4 cup, but still thought they were a bit on the sweet side. I also noticed an aftertaste. They were just ok, probably will not make again, but the recipe does give me ideas for other treats of this type. Thanks for sharing. - 11/9/09
