Vegan Gluten Free Black Bean Mexican Casserole

1 lb Black Beans 1.5 cup pico de gayo fresh salsa2 cups fresh bell peppers- chopped 1 cup onion- chopped 1 tbsp cilantro2 tsb lime 1 tsp red pepper1 cup guacamole
Chop bell peppers and onion
Fry in pan for about 8 minutes with 1/4 cup H2O
until tender
In a 9 x 13 pan, combine black beans and salsa. Then add peppers on top. Lastly, I sprinkled spices on top.
Bake at 40 minutes for 400 degrees.
Once done, add lime juice and guacamole on top.
Serving Size: makes 4 1 cup servings
