Turkey, Rice and Cheese stuffed Bell Peppers

Ingredients
4 Bell Peppers, halved2 cups rice1 lb ground turkey2 cups shredded cheese1 small onion, chopped4 garlic cloves4 tablespoons tomato paste1 egg (or quarter cup egg substitute)Olive OilOregano, Salt and Pepper to taste
Directions
1. Cook rice, you will need 2 cups cooked. Left-over white rice also works.

2. Preheat oven to 350 degrees. Meanwhile, place a pan of water on the stove top to boil.

3. Finely chop the onion and garlic cloves. In a teaspoon of olive oil saute onion and garlic over medium-low heat under translucent.

4. While onion is cooking, cut off tops of bell peppers. Clean out any seeds, and cut in half. Add the halved bell peppers to the boiling water and boil for approximately 3 minutes, or until tender. Remove from water and let dry.

5. Combine ground turkey, rice, onion, garlic, shredded cheese, tomato paste and egg. Add oregano, salt and pepper to taste. Mix well.

6. Stuff bell peppers with turkey/rice mixture. Place in a baking dish and cover with foil. Bake 40 minutes, and remove from the oven.
